Kahlua White Russian Cake Recipe

Ingredients
  • Salt
  • 1/4 c unsalted butter room temperature
  • 1 c Sugar
  • 1 Separated egg
  • 1 Whole egg
  • CAKE:
  • 6 tb Milk room temp
  • 3 1/2 oz sliced white chocolate
  • 1 ts Sugar
  • 1/2 c Whipping cream
  • KAHLUA SYRUP:
  • 1/4 c Kahlua
  • 1 ts Instant coffee powder
  • 3 tb Water
  • 1 3/4 c Whipping cream
  • 1 1/3 c Sifted cake flour
  • 2 oz White chocolate
  • 1/4 ts Vanilla
  • 1/2 ts Baking powder

Directions
  • Step #1 WHITE CHOCOLATE GANACHE: Prepare ganache before mixing & baking cake to allow it to chill.
  • Step #2 GANACHE: In large bowl of electric mixer, mix cream & chocolate.
  • Step #3 Set over simmering water until chocolate is melted.
  • Step #4 Stir until smooth.
  • Step #5 put in the fridge at least 4-5 hrs, stirring every once in awhile, until very thick.
  • Step #6 Add vanilla & beat until stiff.
  • Step #7 CAKE: In small bowl set over simmering water, melt chocolate & cream together.
  • Step #8 Stir until smooth.
  • Step #9 Set aside to cool completely.
  • Step #10 In large bowl of electric mixer, beat batter until fluffy.
  • Step #11 slowly beat in 3/4 c sugar.
  • Step #12 Beat in whole egg & egg yolk until smooth.
  • Step #13 stir in the cooled chocolate.
  • Step #14 Alternately stir in the dry ingredients & milk, beginning & ending with dry ingredients & mixing thoroughly after each addition.
  • Step #15 In small bowl, whisk egg white with dash of salt until soft peaks form.
  • Step #16 Whisk in remaining 1/4 c sugar, beating until very thick & glossy & mixture falls from whisk in heavy ribbon.
  • Step #17 carefully fold egg white into batter.
  • Step #18 Pour batter into 8 or 9 inch heart shaped cake pan which has been lined with butter and floured waxed paper.
  • Step #19 Bake on center shelf of oven at 350 degrees about 40 mins or until wooden pick inserted in center comes out clean.
  • Step #20 Cool in pan 10 mins.
  • Step #21 Turn out of pan, if necessary, first trim any excess crust away from pan rim, & carefully peel away paper.
  • Step #22 Cool completely.
  • Step #23 Transfer cake to serving plate.
  • Step #24 Using wood pick, poke holes about 1 inch deep & at about 1 inch intervals in top of cake.
  • Step #25 Frost with white chocolate ganache.
  • Step #26 KAHLUA SYRUP: In small saucepan, mix water, coffee powder & sugar.
  • Step #27 Stir over low heat/flame to dissolve coffee & sugar.
  • Step #28 Bring to boil & pour this into small bowl.
  • Step #29 Add kahlua & stir this to mix.
  • Step #30 Cool.
