Lamb Curry Recipe

Ingredients
  • 1 tb sliced Mint
  • Olive Oil
  • 1 pt Couscous
  • 2 Garlic Cloves, peeled and finely sliced
  • 1 pt Lamb or Chicken Stock
  • pn Saffron
  • 1 Red Pepper
  • 1 tb Parsley
  • bn Spring Onions
  • Salt & Pepper
  • 1 lb Boned Shoulder of Lamb, cubed.
  • 1 tb Coriander
  • 2 Onions
  • 1 Cucumber
  • 1 tb Chives

Directions
  • Step #1 Lightly saute the meat in two tbsps of olive oil.
  • Step #2 Remove and add the onions, cooking them over a low heat without colouring for 10 mins.
  • Step #3 Add the garlic, saute for 1 min & return the meat to the pan along with the saffron.
  • Step #4 Pour over stock, uncovered, for one hr, Spice up this with salt and pepper & let simmer, or until the lamb is tender.
  • Step #5 You should end up with about half the quantity of liquid.
  • Step #6 If there is more than this, remove the meat & onions & reduce the stock over a high heat.
  • Step #7 Add one pint of boiling water to the couscous, cover with a tea towel & leave for 10 mins, or until all the water is absorbed.
  • Step #8 finely chop the spring onion, core & deseed the red pepper & top and tail the cucumber, remove the seeds & finely dice.
  • Step #9 Fluff up the couscous with a fork, & the sliced vegetables, 2 fl oz of olive oil & Spice up this with salt & pepper.
  • Step #10 Add the sliced herbs & keep warm.
  • Step #11 To serve, ladle the lamb on top of the couscous & serve this with lots of juice.
