Lemon Layer Cake Recipe

Ingredients
  • 5 ea Egg yolks, well beaten
  • Whipped cream/topping
  • 5 ea Egg whites, beaten stiff
  • 1 tb Cornstarch
  • Grated zest of 1 lemon
  • 1 tb Butter
  • 1 1/2 pk Lady Fingers
  • 1 c Freshly squeezed lemon juice
  • 1/2 c Sugar

Directions
  • Step #1 Line 1 qt.
  • Step #2 mold with wax paper & then with lady finger halves.
  • Step #3 Mix lemon juice with sugar & cornstarch in top of double boiler & cook over simmering water until mixture is thickened.
  • Step #4 Add the butter & stir until melted.
  • Step #5 Add beaten egg yolks, stirring constantly, & cook 2 min.
  • Step #6 longer.
  • Step #7 stir in the grated zest & then fold in the beaten egg whites, mixing lightly but thoroughly.
  • Step #8 Pour half the mixture into lined mold.
  • Step #9 Cover with layer of lady finger halves.
  • Step #10 Repeat layers.
  • Step #11 put in the fridge overnight.
  • Step #12 Unmold onto crystal pedestal cake platter.
  • Step #13 Pipe whipped cream onto top & around bottom edge of cake.
  • Step #14 Garnish with paper thin slices of candied lemon peel.
