Lemon Popcorn Recipe

Ingredients
  • 2 tb Chicken bouillon
  • 1/4 c Plus
  • 1 Garlic clove, crushed
  • 1 tb Cider or rice vinegar
  • 1 ts Grated lemon rind
  • 1 1/2" squares
  • 1 c Shredded lettuce
  • 1 c Canned pineapple chunks, no sugar added
  • 2 tb Lemon juice
  • 2 ea 8 oz boned, skinless chicken breasts
  • 1/2 c Grated carrot
  • 1 md Green pepper, cut into
  • 1 tb Soy sauce
  • 3/4 ts Salt
  • 2 ts Cornstarch

Directions
  • Step #1 Preheat broiler.
  • Step #2 Wash chicken & wipe dry.
  • Step #3 mix bouillon, soy sauce, garlic & salt in a shallow dish.
  • Step #4 Place chicken in marinade & spread with fingers.
  • Step #5 let this stand 15 mins, turning every once in awhile so that entire surface of chicken gets coated.
  • Step #6 Broil on rack 4 inches from heat, turning once until done on both sides.
  • Step #7 While chicken is broiling, prepare the sauce: Stir cornstarch into lemon juice; mix with water & vinegar in a saucepan.
  • Step #8 Add pineapple, carrot, green pepper & lemon rind.
  • Step #9 Bring to a boil.
  • Step #10 Lower heat & let simmer until thickened.
  • Step #11 When chicken is broiled, place on two individual serving plates.
  • Step #12 Pour Lemon-pineapple sauce over chicken.
  • Step #13 Serve as soon as possible with a border of shredded lettuce.
