Aromatic Cabbage Recipe

Ingredients
  • Pepper To Taste
  • 1 1/2 tb Salt
  • 1 Serrano Or Jalapeno Chili
  • Chicken Or Fish Stock
  • 1/2 ts Grated Lime Zest
  • 1/2 c Sliced Cilantro Leaves
  • 4 md Radishes
  • 1 md Carrot, Peeled
  • 3 oz Snow Peas
  • Green Part of 1 Scallion
  • 2 tb Whole Cilantro Leaves
  • Lime Juice To Taste
  • 1 Stalk Lemon Grass
  • 4 c Cubed Chicken Meat

Directions
  • Step #1 1.
  • Step #2 Cut lemon grass in 2-inch pieces; bruise lightly.
  • Step #3 mix with stock, cilantro stems, chili, & lime zest in sauce pan.
  • Step #4 Simmer, 15 mins (halfway through, covered, if desired, taste & remove hot pepper, or leave in longer for more heat).
  • Step #5 2.
  • Step #6 Strain.
  • Step #7 (Solids can be re-used with more cilantro to flavor another batch of broth.
  • Step #8 ) Add lime juice, salt & pepper.
  • Step #9 3.
  • Step #10 Cut snow peas in thin diagonal strips.
  • Step #11 With vegetable peeler shave 2 inch ribbons of carrot.
  • Step #12 Thinly slice radishes & scallion.
  • Step #13 4.
  • Step #14 Bring soup to a boil: stir in the snow peas & carrots & boil until just tender --about 1 1/2 mins.
  • Step #15 stir in the radishes, scallion, and cilantro; bring to a boil.
  • Step #16 Serve at once.
