Lemony Iced Tea Recipe

Ingredients
  • Freshly Ground Pepper
  • 1 tb Rosemary
  • Chicken -- split down back,
  • 1/2 ts Salt
  • Rinse, pat dry,
  • 2 ts Minced Garlic
  • & flatten
  • 1 tb Snipped Chives
  • 1/4 c Olive Oil
  • 1 tb sliced Fresh Basil
  • 1/3 c Lemon Juice
  • Lemon Wedges
  • 1 tb Light Soy Sauce
  • 1
  • Snipped Chives
  • 2 ts Dijon Mustard

Directions
  • Step #1 mix chicken, rosemary, mustard, garlic, lemon juice, basil, soy sauce, olive oil, chives, salt & pepper to taste in large plastic food bag.
  • Step #2 Secure bag & shake well so marinade coats chicken.
  • Step #3 put in the fridge 2 to 3 hrs, or as long as overnight.
  • Step #4 Remove chicken from marinade.
  • Step #5 Reserve marinade for basting.
  • Step #6 Place chicken skin-side up on shallow baking pan lined with heavy foil.
  • Step #7 Spice up lightly to taste with salt & pepper.
  • Step #8 Roast on upper oven rack at 425F degrees, brushing often with marinade after first 20 mins.
  • Step #9 Roast until chicken is sizzling, deeply browned & juices run clear when pierced with knife at joint of drumstick & thigh, about 45 mins.
  • Step #10 Serve hot or warm.
  • Step #11 Garnish with chives & lemon wedges.
  • Step #12 Makes 4 servings.
