Chocolate Roll Recipe

Ingredients
  • 3 tbsps unsweetened cocoa powder
  • 1/4 c all-purpose flour
  • 5 eggs
  • 1/2 tsp cream of tartar
  • 1 c white sugar
  • 1 pint heavy whipping cream, whipped
  • 1 tsp vanilla extract
  • 1/4 c confectioners' sugar for dusting

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 Line one 15 1/2 x 10 1/2 inch jelly roll pan with parchment paper & grease & flour lightly.
  • Step #3 Separate the eggs.
  • Step #4 Beat the whites with the cream of tartar until stiff.
  • Step #5 Gradually beat in 1/2 c of the sugar.
  • Step #6 Sift the remaining sugar, cocoa, & flour together.
  • Step #7 Beat the egg yolks until thick & fold the flour mixture into them.
  • Step #8 Stir in vanilla.
  • Step #9 (The egg yolk mixture will be very stiff).
  • Step #10 Carefully fold the egg yolk mixture into the beaten egg whites.
  • Step #11 Evenly spread the batter into the prepared pan.
  • Step #12 Bake at 325F degrees F (165 degrees C) for 20 mins.
  • Step #13 Let cake cool for 5 mins.
  • Step #14 Turn cake onto a towel sprinkled with confectioner's sugar, peel off parchment paper & roll cake up with the towel.
  • Step #15 Let cake cool completely.
  • Step #16 Unroll cake & spread with the whipped cream.
  • Step #17 Roll again.
  • Step #18 Serve with Foamy Butter Sauce or Fudge Sauce.
  • Step #19 For variation, you can add 2 tbsps of rum or your favorite liqueur to the whipped cream.
  • Step #20 Serves 8.
