Bacon Rice Stuffing Recipe

Ingredients
  • 1 tb Soured cream
  • Salt & pepper
  • 3 oz Butter
  • 1 Egg yolk
  • 4 md Potatoes
  • 1/4 ts French mustard
  • 1 tb Mayonnaise
  • 2 Rashers bacon

Directions
  • Step #1 Scrub potatoes well; dry well.
  • Step #2 Place on baking tray, bake in moderate oven for 60 mins or until potatoes are tender.
  • Step #3 With serrated knife carefully cut top off each potato.
  • Step #4 Scoop potato out with small spoon, leaving 5mm (1/4 inch) of potato inside to form shell.
  • Step #5 Push scooped out potato through sieve.
  • Step #6 Add soured cream, mayonnaise, pepper, salt, mustard & egg yolk; mix well.
  • Step #7 Fill potato mixture back into potato shells.
  • Step #8 Spoon melted butter over the potatoes.
  • Step #9 Place potatoes on oven tray, bake in moderate oven 20 mins or until heated through.
  • Step #10 Remove rind from bacon, chop finely.
  • Step #11 place this into pan, stir over heat until heated through.
  • Step #12 Remove rind from bacon, chop finely.
  • Step #13 place this into pan, stir over heat until bacon is crisp; drain.
  • Step #14 Spoon bacon on top of each potato.
