Baloo's Pasilla & Tomato Paste Recipe

Ingredients
  • 1 1/2 dl Honey
  • 1 ts Salt
  • 550 g Pineapple - cubed
  • 3 tb Lemon Thyme
  • 1 dl Water
  • 5 cl Cognac
  • 10 Habaneros - seeded
  • 1 ts Cummin
  • 2 tb Apple Cider Vinegar

Directions
  • Step #1 Mix all ingredients & boil 10 mins.
  • Step #2 Put everything in the food processor & use the steel blade on high speed to make a smooth sauce.
  • Step #3 Add some water if needed.
  • Step #4 Boil 5 mins & put in sterilized jars.
  • Step #5 This is a very hot chili sauce, use it with extreme care.
  • Step #6 Wash your hands with alcohol after you have handled the habaneros! Don't touch your eyes or your private parts before you have washed your hands with alcohol! It will burn for hrs.
