Baloo's Pasilla & Tomato Paste Recipe

Ingredients
  • Juice from 1 Lime
  • 1 tb Honey
  • 250 g Dried Tomatoes
  • 4 dl Water
  • 6 Dried Pasilla Peppers seeded
  • 5 cl Cognac
  • 5 cl Japanese Soy Sauce
  • 3 lg Garlic cloves

Directions
  • Step #1 Toast the chilis & dried tomatoes lightly in a hot frying pan (don't burn).
  • Step #2 Put chilis, tomatoes & water in a sauce pan & boil until soft (c:a 10 mins).
  • Step #3 Add garlic cloves & let simmer 3 more mins.
  • Step #4 Drain & reserve the liquid.
  • Step #5 Put chilis & tomatoes in a food processor.
  • Step #6 Add lime juice, soy sauce, honey & cognac.
  • Step #7 Use the knife on high speed to make a smooth paste.
  • Step #8 Add some of the reserved liquid if needed.
  • Step #9 Boil the paste for a few mins & fill in jars.
  • Step #10 Makes a nice but rather mild chili paste.
  • Step #11 serve this with grilled or deep fried seafood.
