Mango Juice Recipe

Ingredients
  • 6 c Sugar
  • 4 c Mango pulp
  • 1/4 c Lemon juice
  • 1 pk Dry pectin

Directions
  • Step #1 Wash fruit, peel, seed & cut in cubes.
  • Step #2 Mash with a potato masher or run through a food processor/blender or mixer - try NOT to puree.
  • Step #3 In a 10 qt pan, mix fruit, lemon juice & pectin.
  • Step #4 Place over high heat; stirring constantly, bring to a rolling boil that cannot be stirred down.
  • Step #5 Still stirring, add sugar.
  • Step #6 Return to a boil that cannot be stirred down, then boil for exactly 2 mins.
  • Step #7 remove this from heat; skim off foam.
  • Step #8 Ladle hot jam into prepared half-pint jars.
  • Step #9 Wipe rims clean.
  • Step #10 Place lids on jars & firmly screw on rings.
  • Step #11 Process in boiling water bath for ten mins.
  • Step #12 Makes about 6 1/2 c.
