Mango Sauce. Recipe

Ingredients
  • 1 3/4 c sliced mangoes
  • 1/2 c sliced sweet green peppers
  • 1/2 c sliced red onions
  • 1/2 c sliced corander or parsley
  • 2 ts Crushed garlic
  • 3/4 c sliced sweet red peppers
  • 3 tb Olive oil
  • 3 tb Lemon juice
  • 8 oz Vermicelli or other fine
  • Strand pasta

Directions
  • Step #1 1.
  • Step #2 Cook pasta in boiling water according to package instruction or until firm to the bite.
  • Step #3 Rinse with cold water.
  • Step #4 Drain & set aside.
  • Step #5 2.
  • Step #6 In bowl of food processor/blender, mix mangoes, & all other ingrediants.
  • Step #7 Process on & off just until finely sliced.
  • Step #8 Pour over pasta; serve at about room temp.
  • Step #9 TIP: Use a ripe sweet mango for a more intense flavor.
  • Step #10 If unripe, mangoes are unpleasantly sour.
  • Step #11 I have used papaya instead of mangoes.
  • Step #12 Make ahead Prepare salsa early in the day and put in the fridge.
  • Step #13 (This will also allow it to develope more flavor.
  • Step #14 ) Pour over pasta just before serving.
