Mango-lime Puree Recipe

Ingredients
  • 1/2 c Carrot-sliced
  • 1/2 c Champagne Vinegar
  • 2 tb Peanut Oil
  • Salt to taste
  • 1/4 c Sugar
  • 1/2 c White Onion-sliced
  • 2 ea Habanero chiles- seeded
  • 1/2 c Catsup
  • 8 ea Mangos-ripe-peeled-sliced

Directions
  • Step #1 METHOD: This Salsa works well using either orange or green habanero.
  • Step #2 Heat the oil in a saucepan & add the sliced mangos, onion, carrot, & habanero chilies.
  • Step #3 Cook for about 10 mins over med-heat/flame, until onions are soft & translucent.
  • Step #4 This has natural sugar in it so be careful not to scorch it.
  • Step #5 Deglaze with vinegar, & add the catsup & sugar.
  • Step #6 Bring to a slow boil, reduce heat, & let simmer for 35 to 45 mins.
  • Step #7 This last step is done easily in a double boiler so as not to scorch this sauce.
  • Step #8 remove this from heat & Spice up this with salt to taste.
  • Step #9 Transfer to a mixer, pulse sauce, & strain through a medium strainer.
  • Step #10 If the sauce is to thick, add a little water to thin.
  • Step #11 If mixed carefully this may not need strained.
