Step #1 This aromatic barbecued game hen can be easily served West- ern style with rice, cole slaw or a green salad.

Step #9 Flatten with the palm of your hand.
Step #10 In a mortar or food processor/blender, lb or mince garlic, shallots & sugar.
Step #11 add in the remaining ingredients & mix thoroughly.
Step #12 Pour mixture over hens; marinate for at least 2 hrs or overnight in refrigerator.
Step #13 Set hens, skin-side down, on grill & barbecue over medium coals for 15 mins.
Step #14 Turn & barbecue 15 mins longer or until they are thoroughly cooked.
Step #15 serve this with Nuoc Cham dipping sauce.
