Barbeque Rub Recipe

Ingredients
  • 1 tb Sugar
  • 1 tb Sherry
  • 3 tb Light soy sauce
  • 2 tb Catsup
  • 1 ts Dark soy sauce
  • 1 lb Pork tenderloin
  • 2 tb Hoisin sauce
  • 1 Clove garlic; mashed
  • 2 tb Honey

Directions
  • Step #1 trim meat & cut into strips about 2" wide & 6" long.
  • Step #2 mix remaining ingredients in bowl; pour over pork & marinate 2+ hrs.
  • Step #3 Skewer pork with steel hangers & hang onto top rack of oven over shallow roasting pan containing a few inches of water.
  • Step #4 Preheat oven to 425F for 10 mins.
  • Step #5 Roast pork 20 mins.
  • Step #6 With baster, coat with drippings every 5 mins.
  • Step #7 Reduce heat to 325F & roast 5 mins more.
  • Step #8 Slice each strip diagonally against the grain into 1/4" pieces.
  • Step #9 Serve cold.
  • Step #10 Dip with Chinese hot mustard & sesame seeds.
