Basic Chicken Broth Recipe

Ingredients
  • 1/2 c sliced fresh parsley
  • 1/2 lg Green pepper -- sliced
  • 2 ts Garlic paste
  • 1 ts Spice uped salt
  • 4 md Tomatoes -- quartered
  • 1 sm Onion -- sliced
  • 2 1/4 c Water
  • 1 c Brown rice
  • 1/2 c Canned tomato sauce
  • 5 dr Tabasco sauce
  • 1 c sliced tomatoes
  • 1 ts Molasses

Directions
  • Step #1 Place quartered tomatoes & water in mixer jar; puree.
  • Step #2 pour this into large pot, add onion, & boil.
  • Step #3 Add rice, Tabasco, salt, garlic paste, & molasses.
  • Step #4 Lower heat & let simmer, covered, until rice has absorbed almost all the water, usually 40-45 mins.
  • Step #5 Add sliced tomatoes, parsley, stir well, & tomato sauce, & cover.
  • Step #6 Fry bacon crisp in skillet; remove & blot on paper towels.
  • Step #7 Saute green pepper in bacon drippings; remove using slotted spoon & add to rise mixture.
  • Step #8 Crumble bacon & add to rice mixture.
  • Step #9 Mix well and remove this from heat.
  • Step #10 preheat your trusty oven to 350 degrees.
  • Step #11 Lightly oil bottom of 1-quart casserole; pour rice mixture into it & bake for 20 mins, or until rice is tender.
  • Step #12 Yield: 3 c.
