Basic Egg-pasta Recipe Recipe

Ingredients
  • 6 Eggs
  • 4 1/2 c All-purpose flour

Directions
  • Step #1 Recipe by: Northern Italian Cooking Put flour on a pastry board and make a well in the center.
  • Step #2 Break the eggs into well; beat with a fork.
  • Step #3 Draw some flour from inner rim of well over eggs, beating constantly.
  • Step #4 Keep adding flour a little at a time until you have a soft dough.
  • Step #5 Put dough aside.
  • Step #6 With a pastry scraper, remove bits and pieces of dough attached to board.
  • Step #7 Lightly flour board & your hands.
  • Step #8 Knead dough 10 to 12 mins, adding flour a little at a time until dough is smooth & pliable.
  • Step #9 Insert a finger into center of dough.
  • Step #10 If it comes out almost dry, dough is ready for pasta machine.
  • Step #11 If dough is sticky, knead it a little longer adding more flour.
  • Step #12 Cut an egg-size piece from dough.
  • Step #13 Wrap remaining dough in a cloth towel to prevent it from drying.
  • Step #14 Set rollers of pasta machine at their widest setting.
  • Step #15 Flatten small piece of dough, dust with flour and fold in half.
  • Step #16 Run it through pasta machine.
  • Step #17 Repeat this step 5 to 8 times until dough is smooth & not sticky.
  • Step #18 Change notch of pasta machine to the next setting & run dough through once without folding.
  • Step #19 Keep changing setting & working pasta sheet through machine until pasta reaches desired thickness.
  • Step #20 A good thickness for general use is about 1/16 inch.
  • Step #21 Sprinkle top dough with flour between rollings if it is sticky.
