Basic Pesto Recipe

Ingredients
  • 1 tb White vinegar
  • 5 c All-purpose flour
  • Ice Water
  • 1 lb cold shortening
  • 1 Egg

Directions
  • Step #1 1.
  • Step #2 Measure flour & place this in a large bowl.
  • Step #3 Cut cold shortening into 1" cubes & add to flour.
  • Step #4 Using a pastry mixer or 2 knives, cut shortening into flour until it is the consistency of coarse meal.
  • Step #5 Make a well in centre.
  • Step #6 2.
  • Step #7 Place egg & vinegar in a measuring c.
  • Step #8 Add ice water to bring it up to 1 c.
  • Step #9 Whisk to break up egg & mix with water.
  • Step #10 Add liquid to flour mixture all at once.
  • Step #11 Then, using a fork, work until all dry ingredients are moist.
  • Step #12 Using your hands, gather dough into a firm ball.
  • Step #13 Do not over- mix or knead dough.
  • Step #14 Cut dough into 4 equal pieces.
  • Step #15 3.
  • Step #16 Wrap each piece of dough individually & put in the fridge until well chilled, at least 30 mins but preferably overnight.
  • Step #17 Well-wrapped pastry will keep well inthe refrigerator for a least a week or in the freezer for several months.
