Ingredients
  • 1 1/4 c Warm
  • 1 c Bread flour
  • 1 c Whole-wheat flour
  • 1 pk Yeast

Directions
  • Step #1 mix yeast & warm water in 3-quart bowl.
  • Step #2 let this stand until some yeast clumps rise to surface.
  • Step #3 slowly stir in the flours.
  • Step #4 Mixture will be very thick.
  • Step #5 Cover with plastic.
  • Step #6 let this stand overnight in warm place.
  • Step #7 Sponge will double & become puffy.
  • Step #8 Use as directed in recipes.
  • Step #9 Makes enough for 2 baguettes, 16 rolls & 2 focaccia loaves.
