Basic Stock Recipe

Ingredients
  • 1 c Sifted cake flour
  • 2 Egg whites
  • 1 c Sugar, divided
  • 1/4 c Water
  • 2 ts Vanilla
  • 1 ts Baking powder
  • 1/4 ts Salt
  • 3 Eggs, separated

Directions
  • Step #1 1.
  • Step #2 mix cake flour, & salt, baking powder, stir well & set aside.
  • Step #3 2.
  • Step #4 Beat 3 egg yolks in a large mixing bowl at high speed of an electric mixer for 1 min.
  • Step #5 slowly add 3/4 c sugar, beating constantly until egg yolks are thick & pale, about 5 mins.
  • Step #6 Add vanilla & 1/4 c water, beating at lowish speed until well mixed.
  • Step #7 Add flour mixture to egg yolk mixture beating at lowish speed until mix- ed & set aside.
  • Step #8 3.
  • Step #9 Beat 5 egg whites at about room temp at high speed until foamy.
  • Step #10 slowly add in the remaining 1/4 c sugar, 1 tbsp at a time, beating until still peaks form.
  • Step #11 carefully stir one fourth of the egg white mixture into the batter.
  • Step #12 carefully fold in the remaining egg white mixture.
  • Step #13 4.
  • Step #14 Pour batter into an ungreased 10 inch tube pan.
  • Step #15 bake this at 350F for 35 mins or until cake springs back when touched lightly in center.
  • Step #16 Invert pan; cool 45 mins.
  • Step #17 Loosen cake from sides of pan, remove.
