Mark's Soda Bread Recipe

Ingredients
  • 8 oz Cream cheese
  • Juice of one lemon
  • 1 pk Wheatsworth crackers
  • 1/2 c Crushed walnuts
  • Salmon
  • Fresh ground black pepper
  • Thinly
  • 1/2 ts Ground coriander
  • 1 bn Fresh dill
  • sl Smoked
  • Sliced
  • 24 Three inch by one inch
  • 1 Cucumber -- skinned and
  • 1/2 ts Cayenne pepper
  • 1/2 c Minced green onion
  • 1 Stalk celery -- minced

Directions
  • Step #1 Mix cheese, green onion, walnuts, celery, lemon juice, cayenne and coriander until thoroughly mixd.
  • Step #2 Obviously the heat can be adjusted to taste, but you don't want to overpower the other flavors, especially the salmon.
  • Step #3 I figure if half your guests complain it's too hot, & half say it could have been hotter, it's about right.
  • Step #4 Place from to 1 tsp.
  • Step #5 of the cheese mixture on the end of one of the salmon strips, Sprinkle top with black pepper, & roll up jellyroll style.
  • Step #6 These steps can be done a couple hrs ahead of time, just cover with plastic wrap & put in the fridge.
  • Step #7 To serve, arrange crackers on serving tray.
  • Step #8 Top each one with a cucumber slice Place a salmon roll on top of the cucumber slice and garnish with a sprig of dill.
  • Step #9 Serves 5 to 10 people depending on how gluttonous they are!.
