Marvelous Macaroons Recipe

Ingredients
  • 1 ts Ground ginger
  • 2 tb Brown sugar
  • 1 lg Egg white beaten till frothy
  • 2 c Ground pecans
  • 1 ts Lemon zest finely grated
  • ---CRUST------

Directions
  • Step #1 --FILLING----- 2 lb Cream cheese, room temp 3/4 c Granulated white sugar 4 lg Eggs lightly beaten 1/2 c Heavy cream 1 ts Vanilla extract 8 oz Ginger preserves 2 ts Ground ginger 1 tb Fresh ginger (finely grated) Minced candied ginger -for garnish Crust: Mix nuts with brown sugar , egg white, ginger & lemon rind until mixture is just bound together.
  • Step #2 Press into bottom & sides of 9 inch springform pan.
  • Step #3 Filling: Beat cream cheese & sugar together until smooth & light.
  • Step #4 Add eggs, vanilla, ground ginger, ginger preserves, cream, & fresh ginger.
  • Step #5 Mix thoroughly & pour this into prepared nut crust.
  • Step #6 bake this at 300F =B0 for 1 hr & 40 mins.
  • Step #7 Cool 1 hr in turned off oven or overnight.
  • Step #8 Cool completely before chilling in refridgerator.
  • Step #9 If serving at home, remove springform band from from pan & place on serving tray or dish.
  • Step #10 Garnish with candied ginger.
  • Step #11 This needs one day to mellow! Serve in very thin wedges.
