Step #1 Peel the outer skin off the shallots & place them with the unpeeled aubergines, garlic cloves & chili under a hot grill or over a barbecue until browned.
Step #2 Peel the aubergines & garlic.
Step #3 lb the chili, shallots & garlic together.
Step #4 Then add the salt and aubergine & lb together again.
Step #5 Fry the lbed mixture in the vegetable oil for 2-3 mins.
Step #6 Remove from the heat.
Step #7 Cut the hard-boiled eggs into wedge shapes & mix in with the other ingredients or serve separately.
Step #8 Sprinkle top the aubergine with mint leaves & serve accompa- nied by vegetables.
