Mashed Bean Dip Recipe

Ingredients
  • 2 Aubergines
  • 2 tb Vegetable oil
  • 20 Mint leaves
  • Stephen Ceideburg
  • 1 ts Salt
  • 5 Shallots
  • 1 Fresh chili
  • 3 Eggs hard-boiled
  • 5 Cloves garlic

Directions
  • Step #1 Peel the outer skin off the shallots & place them with the unpeeled aubergines, garlic cloves & chili under a hot grill or over a barbecue until browned.
  • Step #2 Peel the aubergines & garlic.
  • Step #3 lb the chili, shallots & garlic together.
  • Step #4 Then add the salt and aubergine & lb together again.
  • Step #5 Fry the lbed mixture in the vegetable oil for 2-3 mins.
  • Step #6 Remove from the heat.
  • Step #7 Cut the hard-boiled eggs into wedge shapes & mix in with the other ingredients or serve separately.
  • Step #8 Sprinkle top the aubergine with mint leaves & serve accompa- nied by vegetables.
