Ingredients
1 1/2 tb Oil
1/2 c Strawberry preserves Cherry preserves
1/2 c Sweet red wine; kosher for Passover
1/8 ts Salt
1 lg Apple; peeled, cored and thinly sliced
5 Whole matzos
1/2 ts Cinnamon
2 tb Matzo meal
2 tb Sugar
1/8 c Nuts; finely sliced
1 1/2 tb Honey
2 Eggs; separated
Directions
Step #1 In a large deep dish, soak the whole matzos in the wine for 5 mins, being careful not to break them.
Step #2 In a small bowl, beat the egg yolks & sugar until light & lemon-colored.
Step #3 stir in the the matzo meal.
Step #4 In a clean small bowl, beat the egg whites with the salt until the egg whites are stiff but not dry.
Step #5 Fold the egg whites into the egg yolk mixture.
Step #6 mix the preserves & nuts in a small bowl.
Step #7 Mix well.
Step #8 Arrange the sliced apples in a shallow dish; Sprinkle top with the cinnamon.
Step #9 Heat the honey & oil in a 8 x 8-inch baking pan over low heat/flame.
Step #10 Stir until mixed.
Step #11 Carefully place 1 matzo in the center of the pan & spread with half of the egg mixture.
Step #12 Place the second matzo over the filling and spread with half of the preserves mixture.
Step #13 Place the third matzo on top of this & arrange the sliced apples & cinnamon evenly over the matzo.
Step #14 Cover with the fourth matzo; spread with the remaining preserves mixture.
Step #15 top this with the fifth matzo.
Step #16 Stir any leftover wine into the remaining egg mixture & spread over the top & sides of the strudel.
Step #17 Bake in a preheated 325-degree F.
Step #18 oven for 30 mins or until golden brown.
Step #19 Cut into portions while still warm, but leave in the pan to cool thoroughly.
Step #20 Serve cold.
Step #21 Serves 8 to 10.
