Mediterranean Bake Recipe

Ingredients
  • 2 1/2 lb Ripe tomatoes, cut in large
  • Parmesan cheese
  • 4 tb Olive Oil
  • Salt & freshly ground
  • 1 c Small pasta, such as thimble
  • 1 1/4 ts Dried leaf oregano crumbled
  • 2 tb Coarsely sliced fresh basil
  • Bowl of freshly grated
  • Dice
  • 1 lg Onion, minced
  • Shaped ditali
  • Pepper to taste
  • 2 c Chicken stock or any broth
  • 1 1/4 c Water
  • 4 lg Garlic cloves, sliced

Directions
  • Step #1 Heat olive oil in a large saucepan over medium-low heat.
  • Step #2 Add onion and cook, stirring every once in awhile, about 12 mins or until soft but not brown.
  • Step #3 Add tomatoes, garlic, water, salt, stock, oregano, & pepper; bring to a boil.
  • Step #4 Cover & cook over low heat/flame 45 mins.
  • Step #5 Puree soup in a food mill; or puree in a food processor/blender & strain, pressing so pulp goes through strainer.
  • Step #6 (Soup can be kept, covered, 2 days in a refrigerator.
  • Step #7 ) Return soup to saucepan & reheat.
  • Step #8 If soup appears thin, simmer uncovered 2-3 mins to thicken slightly.
  • Step #9 Bring a medium saucepan of water to a boil & add salt.
  • Step #10 Just before serving add pasta & cook uncovered over high heat, stirring every once in awhile, 5-8 mins or until tender but firm to the bite.
  • Step #11 Drain well.
  • Step #12 Add to soup.
  • Step #13 stir in the 1 tbsp basil.
  • Step #14 Taste & adjust Spice uping.
  • Step #15 Sprinkle top with remaining 1 tbsp basil.
  • Step #16 serve this with parmesan cheese, if desired.
  • Step #17 NOTE: Made this only when you have very ripe tomatoes ~ they are the soul of this soup while the ditali, or pasta thimbles, give it body.
  • Step #18 The soup is relatively easy to prepare because there is no need to peel or seed the tomatoes.
  • Step #19 After cooking, they are pureed in either a food mill or food processor/blender.
  • Step #20 A garnish of tomato slices nad basil sprigs looks very attractive.
