Bean Moussaka Recipe

Ingredients
  • 2 tb Oat bran
  • 1/4 ts Oregano
  • 1 Egg white
  • 1/8 ts Pepper
  • 1/4 ts Ground sage
  • 1/2 c Onions, finely sliced
  • 1/8 ts Garlic powder
  • 1 c Shredded carrots
  • 1/4 ts Thyme
  • 1 c Rolled oats
  • 1 lb Can butter beans, drained
  • Salt to taste
  • 3/4 c Water
  • 1/4 ts Basil

Directions
  • Step #1 Butter beans (like lima) or Great Northern beans, rinsed, drained 1 c dry beans make about 2 c puree but I'm not sure about canned.
  • Step #2 "Oats, beans & carrots make this deliciously spiced loaf a real high-fiber meal.
  • Step #3 Try it hot for dinner & have the leftovers in a sandwich the next day.
  • Step #4 " preheat your trusty oven to 350F Lightly oil a 4x8 inch loaf pan or spray with nonstick cooking spray.
  • Step #5 Place oats & water in a small bowl & let stand 15 min.
  • Step #6 Place beans in a large bowl, mash.
  • Step #7 add in the remaining ingredients.
  • Step #8 Mix well with fork making sure that spices are evenly distributed.
  • Step #9 Add oats to bean mixture.
  • Step #10 Mix well.
  • Step #11 Press firmly into prepared pan.
  • Step #12 Bake 1 hr 15 min.
  • Step #13 Invert onto serving plate.
  • Step #14 let this stand 5 min before slicing.
  • Step #15 Per serving: 161 calories, 1 g fat, 19 mg sodium, 0 mg cholesterol, 29 g carbohydrate, 9 g protein, 7 g fiber.
