Step #1 Separate the kidneys with a sharp knife, discarding all gristly portions & fat.
Step #2 Sprinkle top with salt.
Step #3 Cover with claret, sliced onion, add bay leaves, pepper.
Step #4 Let it marinate 2 hrs.
Step #5 lb the steak with flour, & cut into 1" pieces.
Step #6 Brown suet or heat bacon drippings in iron skillet.
Step #7 Then add sliced onion and cook this until clear; remove onion from skillet.
Step #8 over med-heat/flame, brown steak well.
Step #9 Next drain the kidneys, reserving the marinade; dredge with flour, & brown, stirring carefully.
Step #10 Add 1 pt or less or hot water, stir well, add sliced celery & parsley, & marjoram.
Step #11 Mix all well, & transfer to the casserole from which you intend to serve the pie.
Step #12 Strain into it the marinade.
Step #13 Cover with a tight lid, & bake this at 325?F for about 1 hr.
Step #14 remove this from oven.
Step #15 Brown the mushrooms in bacon drippings, and if they need thickening, thicken with flour mixed in cold water and stirred carefully to avoid lumps.
Step #16 Add the mushrooms to the casserole mixture.
Step #17 Cover with a crust of puff-paste, pie crust, & bake this until brown, or biscuit dough, & return to 400?F oven, about 20 to 30 mins.
