Step #1 Juice of 1 lemon (1/4 c) Finely chop onion.
Step #2 Mince garlic and ginger.
Step #3 Place onions, coriander, cinnamon, cardamom, cloves, peppercorns, ginger, fenugreek, red pepper, allspice, garlic, salt and paprika in dry skillet & cook over med-heat/flame 3 to 4 mins, or until spices are lightly roasted & fragrant.
Step #4 mix roasted spice mixture, olive oil & lemon juice in mixer & puree to smooth paste.
Step #5 Spread paste on meat & marinate overnight.
Step #6 WARNING: A little of this spicy mixture goes a long way! Makes enough marinade for 1 1/2 lbs tuna, pork tenderloin & sirloin steak.
