Mexi-corn Salsa Recipe

Ingredients
  • 1/2 c Thinly sliced ripe olives
  • 1 ts Lemon juice
  • 1 c PACE Picante Sauce
  • 1/4 ts Salt
  • 1/2 md Tomato,sliced
  • 1/2 c Shredded cheddar or Monterey Jack cheese
  • 1 Ripe avacado,peeled,pitted, and mashed
  • 3/4 c Sour cream

Directions
  • Step #1 mix avacado, 2 tbsps PACE Picante Sauce, lemon juice and salt; mix well.
  • Step #2 stir in the tomato.
  • Step #3 Spoon evenly onto bottom of shallow 1-quart clear glass bowl (straight sides preferred).
  • Step #4 top this with olives; cover & chill.
  • Step #5 To serve, top olives evenly with sour cream.
  • Step #6 Spoon remaining PACE Picante Sauce over sour cream, Sprinkle top with cheese.
  • Step #7 serve this with tortilla chips of corn chips.
  • Step #8 Make about 3 1/2 c dip.
