Cabbage Patch Soup/stew Recipe

Ingredients
  • 2 c Shredded cabbage
  • Salt to taste
  • 2 ts Dried leaf basil,crumbled
  • 1 tb Olive oil
  • 1/2 c Orzo
  • 2 c Water
  • 1 Onion,medium-size,sliced
  • Pepper to taste
  • 1 Carrot,lg,1/4" thick slices
  • 1 Garlic clove,finely sliced
  • 14 3/4 oz Chicken broth,reduced-sodium
  • 1/2 lb Turkey sausage
  • 15 oz Plum tomatoes,in juice
  • 1 ts Dried leaf thyme,crumbled

Directions
  • Step #1 1.
  • Step #2 Brown sausage in oil in large nonstick saucepan over medium-high heat until browned but not cooked through.
  • Step #3 Remove sausage; cut into 16 pieces.
  • Step #4  2.
  • Step #5 Reduce heat to medium.
  • Step #6 Add onion, carrot & garlic to saucepan; saute 3 mins to soften.
  • Step #7 slowly add water, cabbage, broth, basil & thyme, tomatoes, breaking up tomatoes.
  • Step #8 Simmer, covered, 15 mins.
  • Step #9 Add orzo & sausage; simmer, covered, 10 mins until sausage is cooked & orzo is tender.
  • Step #10 Spice up this with salt & pepper.
