Caesar Salad Dressing Recipe

Ingredients
  • 1/2 c Best-quality olive oil
  • 2 To 3 medium garlic cloves
  • 1/2 To 2/3 c freshly grated Parmesan cheese
  • Croutons
  • 4 To 5 tbsps fresh lemon juice
  • 6 To 8 anchovy fillets, drained
  • Salt, freshly ground black pepper
  • 1 tb Dijon-style mustard
  • 1 lg Head romaine lettuce
  • 1 sm Egg

Directions
  • Step #1 Make the croutons ahead for this traditional recipe from Joie Warner's "Salads" (Hearst Books, 1988).
  • Step #2 With the motor running, drop garlic cloves into the bowl of a food processor fitted with the steel blade.
  • Step #3 Mince, then add anchovies and process to mix.
  • Step #4 With the motor running, add oil in a thin stream until thickened.
  • Step #5 Add lemon juice & egg; process a few seconds to mix.
  • Step #6 Tear lettuce leaves into manageable pieces & place this in a large salad bowl.
  • Step #7 Add dressing & toss.
  • Step #8 Sprinkle top with Parmesan cheese, toss again, & top this with croutons.
  • Step #9 Serve at once, passing the pepper mill for each person to add to taste.
  • Step #10 Makes 6 servings.
  • Step #11 CROUTONS: Melt 1 tbsp butter with 5 tbsps best-quality olive oil in a large skillet.
  • Step #12 Add 2 small garlic cloves, minced; 1 tsp oregano; & 1/2 tsp thyme.
  • Step #13 Cut 5 slices day-old bread (crusts removed) into 1/2-inch cubes and fry until lightly browned.
