Ingredients
  • 1 Egg yolk; slightly beaten
  • 1/2 c sliced onion
  • 30 oz Canned pinto beans
  • 1 tb Water
  • 14 1/2 oz Mexican-style tomatoes - sliced -
  • 3 tb Dry taco Spice uping mix
  • 4 oz Monterey Jack cheese
  • 1 Can cornbread twists
  • 1 1/4 lb Lean ground beef; crumbled
  • 1/3 c Ripe olives, sliced
  • 3 tb sliced fresh parsley

Directions
  • Step #1 1.
  • Step #2 Saute beef & onion in a 12" cast-iron skillet over med-heat/flame; drain.
  • Step #3 2.
  • Step #4 Add taco Spice uping, tomatoes, beans, olives & parsley.
  • Step #5 Sprinkle top with cheese.
  • Step #6 3.
  • Step #7 Twist cornbread strips while shaping in lattice pattern over mixture, making sure strips adhere to sides of dish.
  • Step #8 Brush twists with mixture of egg & water.
  • Step #9 4.
  • Step #10 bake this at 350 F for 15 mins, or until lightly browned.
