Cape Cod Cranberry Pie Recipe

Ingredients
  • 2 Bay leaves
  • 1/4 c Whole cranberry sauce
  • 1/4 c Ketchup
  • 3/4 c Dark brown sugar -- packed
  • 1/2 ts Dried rosemary
  • 2 lg Eggs -- lightly beaten
  • 1/2 c Milk
  • 2 1/2 lb Ground chuck
  • 1/4 ts White pepper
  • 1/2 c Plain bread crumbs
  • 1 md Onion -- finely sliced
  • 1/2 ts Dried marjoram
  • 1/2 ts Dried thyme
  • 1 ts Salt

Directions
  • Step #1 Preheat the oven to 350 degrees.
  • Step #2 Lightly oil a 9 x 5 x 3-inch loaf pan.
  • Step #3 In a small bowl, mix the cranberry sauce & brown sugar.
  • Step #4 (NOTE: sometimes I add a few tbsps of chili sauce for an extra kick) Place the cranberry sauce mixture in the bottom of the prepared loaf pan.
  • Step #5 In a large bowl, mix the remaining ingredients except the bay leaves & mix well.
  • Step #6 Set the meatloaf mixture in the pan on top of the sauce.
  • Step #7 Top the loaf with the bay leaves & bake for 1 1/2 hrs or until done.
  • Step #8 Allow the loaf to cool for 20 mins.
  • Step #9 Remove the bay leaves.
  • Step #10 Very carefully turn the loaf onto a serving plate so that the sauce side is up.
  • Step #11 Drizzle the pan juices over the loaf.
