Caramel-nut Corn Recipe

Ingredients
  • 1 c Coarsely sliced walnuts
  • 1/3 c Baking cocoa
  • 1 c Sugar
  • 1/2 c Heavy whipping cream
  • 2 Eggs
  • 3/4 c Flour
  • 1 c Coarsely sliced macadamia
  • 1/2 c Margarine -- melted
  • 14 oz Caramels
  • 1 1/2 ts Rum extract, if desired
  • Nuts

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 Grease rectangular pan 13x9x2 inches.
  • Step #3 Stir together cocoa & margarine in medium bowl.
  • Step #4 stir in the eggs, rum extract, sugar & flour until mixed.
  • Step #5 pour this into pan, spread evenly.
  • Step #6 Bake 10-12 mins or until edges pull away from sides of pan.
  • Step #7 Heat caramels & whipping cream in heavy 1 1/2 quart saucepan over medium heat until mixed.
  • Step #8 stir in the walnuts & macadamia nuts.
  • Step #9 Pour over chocolate layer; spread evenly.
  • Step #10 Bake 15-20 mins or until topping is set; cool completely.
  • Step #11 Cut into 2x1" bars.
  • Step #12 Makes 48 bars.
