Cinnamon Rock Candy Recipe

Ingredients
  • 3 3/4 c sugar
  • 1 1/4 c light corn syrup
  • 1/3 c confectioners' sugar
  • 1 c water
  • 1 tsp cinnamon oil
  • 1 tsp red liquid food coloring

Directions
  • Step #1 Line a 15-in.
  • Step #2 x 10-in.
  • Step #3 x 1-in.
  • Step #4 baking pan with foil; butter the foil & set aside.
  • Step #5 In a large heavy saucepan, sugar, mix water, corn syrup & food coloring.
  • Step #6 Bring to a boil over med-heat/flame, stirring every once in awhile.
  • Step #7 Cover & cook for 3 mins to dissolve sugar crystals.
  • Step #8 Uncover; cook on medium-high heat, without stirring, until a candy thermometer reads 300F degrees F (hard-crack stage), about 25 mins.
  • Step #9 Remove from the heat; stir in the cinnamon oil (keep face away from mixture as odor is very strong).
  • Step #10 Immediately pour onto prepared pan.
  • Step #11 Cool completely, about 45 mins.
  • Step #12 Break the candy into pieces using the edge of a metal mallet.
  • Step #13 Sprinkle top both sides of candy with confectioners' sugar.
  • Step #14 Store in airtight container.
