Celery Seed Dressing Recipe

Ingredients
  • 1/2 ts Black pepper
  • 3 c All-purpose flour
  • 3 tb Vegetable shortening
  • 2 ts Salt
  • 2 1/2 ts Celery seeds

Directions
  • Step #1 About 2/3 c water "Celery seeds are not the seeds of the celery you eat as a vegetable.
  • Step #2 Rather, they are the tangy fruit of a plant related to the parsley family.
  • Step #3 Try them with a cold glass of fruit juice mixed with club soda.
  • Step #4 350~F.
  • Step #5 20 to 25 mins Preheat the oven to 350~F.
  • Step #6 stir this together the flour, celery seeds, salt, & pepper in a large bowl or in the food processor/blender.
  • Step #7 Cut in the shortening until the mixture is the consistency of coarse meal.
  • Step #8 Add enough of the water to form a dough that will hold together in a cohesive ball.
  • Step #9 Divide the dough into 2 equal portions for rolling.
  • Step #10 On a floured surface or pastry cloth, roll thin, 1/8 inch thick maximum.
  • Step #11 Cut the dough into 2-inch circles with a cookie cutter.
  • Step #12 Arrange them on ungreased baking sheets.
  • Step #13 Bake for 20 to 25 mins, until lightly browned.
  • Step #14 Cool on a rack.
  • Step #15 Yield: 40-50.
  • Step #16 VARIATION: Caraway seeds can be substituted for celery seeds.
  • Step #17 Grind the caraway seeds in a food mill before using.
  • Step #18 The caraway version of these crackers is delicious with cream cheese.
