Celery-celery-celery Bread Recipe

Ingredients
  • 2 tb Walnut oil
  • Salt
  • 4 Parsley sprigs
  • 2 Golden Delicious apples
  • 1 lg Head celery
  • Freshly ground pepper
  • 10 Walnuts; cracked left in large pieces
  • Lemon juice =OR=- Champagne vinegar
  • 6 Pale green celery leaves
  • 1/2 c Dried currants

Directions
  • Step #1 IF THE CURRANTS ARE HARD, cover them with warm water & set them aside to soften while you cut the celery & apples.
  • Step #2 When they're soft, after 10 mins or so, drain them & squeeze out the water.
  • Step #3 Separate the stalks of celery & peel the tougher outer stalks.
  • Step #4 Slice the celery into thin pieces, straight across or at an angle.
  • Step #5 Cut the apples into quarters or sixths if they're large & thinly slice them crosswise.
  • Step #6 Finely chop the celery leaves & the parsley & crack the nuts.
  • Step #7 mix the celery, celery leaves, apples, currants, parsley & walnuts in a bowl.
  • Step #8 Toss them with just enough walnut oil to coat everything lightly.
  • Step #9 Add the lemon juice or vinegar to taste, salt lightly, Spice up this with pepper & toss again.
