Cheesecake Passover Recipe

Ingredients
  • 3/4 c Sugar -- superfine
  • Salt
  • 1 c Sour cream -- cold
  • Cool
  • 6 oz Cream cheese -- softened but
  • 1 pn Kosher salt -- or table
  • 1 c Heavy cream -- cold
  • 3 tb Fresh lemon juice
  • 1/4 ts Vanilla extract

Directions
  • Step #1 Chill mixing bowl & beaters.
  • Step #2 Beat cream cheese on medium speed until soft & smooth.
  • Step #3 slowly add sugar, 1/4 ucp at a time, beating well after each addition.
  • Step #4 Beat in sour cream, then the heavy cream.
  • Step #5 Add salt, lemon juice & vanilla.
  • Step #6 Beat just until mixture is thick & smooth.
  • Step #7 Cover & put in the fridge overnight.
  • Step #8 Wash beaters & bowl & chill again.
  • Step #9 Put chilled mixture in cold mixing bowl & beat, slowly increasing speed from low to medium, beat mixture until lightand creamy, about 3mins.
  • Step #10 Serve at once or freeze up to 24 hrs.
  • Step #11 Allow to soften 15 mins in refrigerator if frozen.
  • Step #12 Garnish with strawberries.
  • Step #13 SUPERFINE SUGAR can be made by processing granulated sugar in your food processor/blender.
