Cherry Pound Cake Recipe

Ingredients
  • 1/2 c Ruby Port
  • 1 1/2 tb Orange peel, grated
  • 1/4 c Red Current Jelly
  • 2 ts Arrowroot
  • 16 1/2 oz Dark Sweet Cherries, Pitted
  • 1 tb Dijon Mustard
  • 2 tb Ruby Port
  • 1/4 c Orange Juice

Directions
  • Step #1 Drain cherries; put in the fridge cherry syrup & reserve for other use.
  • Step #2 In a medium saucepan, slowly stir the port, into the mustard, keeping smooth.
  • Step #3 stir in the the cherries, juice & currant jelly, rind, stirring until the jelly melts.
  • Step #4 Bring to a near boil over high heat.
  • Step #5 Add 2 tbsps of ruby port stirred into 2 tsps arrowroot and stir constantly until thickened & glossy.
