Ingredients
  • 3/4 c Unsweetened applesauce
  • 2 lg Eggs, separated
  • 1 3/4 c Whole wheat flour
  • 1 tb Baking powder
  • 1/2 c Packed dates
  • 16 oz cn waterpacked cherries sour
  • 1/2 c Sweet milk
  • 2 tb Lowfat soy flour
  • 1/4 ts Salt
  • 2 tb Nonfat dry milk powder
  • 1/2 ts Cloves
  • 1 ts Baking soda
  • 1 tb Cinnamon
  • 1/4 c Light oil
  • 1/2 ts Nutmeg

Directions
  • Step #1 1.
  • Step #2 Prepare an 8 inch square cake pan.
  • Step #3 Oil & flour.
  • Step #4 2.
  • Step #5 Preheat oven to 350 F.
  • Step #6 3.
  • Step #7 Drain waterpacked cherries.
  • Step #8 4.
  • Step #9 After cherries have drained will, measure 1 c of them & set aside.
  • Step #10 5.
  • Step #11 In mixer puree together 1/2 c sweet milk with 1/2 c packed dates.
  • Step #12 6.
  • Step #13 mix oil, egg yolks & applesauce.
  • Step #14 Set aside next to cherries.
  • Step #15 7.
  • Step #16 In a small bowl beat 2 egg whites until stiff & set aside.
  • Step #17 8.
  • Step #18 In a large bowl mix flours, dry milk, baking powder, baking soda, salt and spices.
  • Step #19 Stir well.
  • Step #20 9.
  • Step #21 slowly mix mixed liquid ingredients into dry ingredients until well moistened.
  • Step #22 10.
  • Step #23 carefully stir in the cherries.
  • Step #24 11.
  • Step #25 Then fold in the egg whites just until mixd.
  • Step #26 12 Pour batter into the prepared cake pan & bake this at 350 F for 50 mins.

  • Step #28 Cool cake to about room temp.
  • Step #29 14.
  • Step #30 put in the fridge covered.
  • Step #31 could be used served as ccakes Yield Variation: Substitute 1 c fresh sliced strawberries for cherries.
