Chestnut~ Bacon & Thyme Stuffing Recipe

Ingredients
  • 1 Onion, sliced
  • 2 ts Salt
  • Butter
  • 1 lb Chestnuts, shelled, skins removed & sliced
  • 6 oz Canadian bacon, sliced
  • 2 ts Dried sage leaves
  • 5 c Lightly packed fresh bread cubes

  • 1 Green apple, cored & sliced
  • 1 lb Chicken & apple sausages
  • 2 Eggs, beaten
  • 3 Stalks celery, sliced

Directions
  • Step #1 Slice crusts off bread & cut bread into 1/2-inch cubes.
  • Step #2 Spread on jellyroll pan & toast in 375-degree oven until lightly browned, about 15 mins, tossing every 5 mins.
  • Step #3 Toss toasted bread cubes with sage & salt in mixing bowl.
  • Step #4 Drizzle with 1/2 c melted butter & set aside.
  • Step #5 Remove sausage from casings & break apart.
  • Step #6 Heat 1 tbsp butter in large saute pan, add sausage & brown, breaking up in pan.
  • Step #7 Remove sausage.
  • Step #8 In same pan, saute onion, bacon & celery in same fat until onions are soft.
  • Step #9 Add sausage, onion mixture, apple & chestnuts to bread cubes and toss well to mix.
  • Step #10 stir in the beaten eggs.
  • Step #11 Makes 8 c stuffing, about 16 servings.
