Coconut Bread Recipe

Ingredients
  • 1 egg
  • 1/4 c butter or margarine, softened
  • 1/2 tsp vanilla extract
  • 3/4 c flaked coconut
  • Additional sugar
  • 1/2 tsp almond extract
  • 1 c sugar
  • 2 c all-purpose flour
  • 1/4 tsp salt
  • 1 c milk
  • 3 tsps baking powder

Directions
  • Step #1 In a mixing bowl, cream butter & sugar.
  • Step #2 Beat in the egg & extracts.
  • Step #3 Combine the flour, baking powder & salt; add to creamed mixture alternately with milk.
  • Step #4 Fold in coconut.
  • Step #5 Pour into a greased 9-in.
  • Step #6 x 5-in.
  • Step #7 x 3-in.
  • Step #8 loaf pan.
  • Step #9 Sprinkle top with sugar.
  • Step #10 Bake at 350 degrees F for 50-55 mins or until a toothpick comes out clean.
  • Step #11 Cool for 10 mins before removing from pan to a wire rack.
