Ingredients
  • 2 3/4 c milk, divided
  • 2 tbsps minced fresh parsley
  • 3 c biscuit mix
  • 1/2 tsp pepper
  • 1/2 c sliced onion
  • 1 1/2 tsps salt
  • 1/4 c sliced green onions
  • 2 c water
  • 4 c fresh corn
  • 2 c sliced peeled potatoes
  • 6 hard-cooked eggs, sliced

Directions
  • Step #1 Place potatoes, onion, salt, pepper & water in a large saucepan.
  • Step #2 Bring to a boil & boil, uncovered, for 5 mins.
  • Step #3 Add corn; return to boiling & boil for 2 mins.
  • Step #4 Drain.
  • Step #5 Add 1-3/4 c milk, green onions & parsley.
  • Step #6 Pour into a greased 13-in.
  • Step #7 x 9-in.
  • Step #8 x 2-in.
  • Step #9 baking dish.
  • Step #10 Top with eggs.
  • Step #11 Mix biscuit mix & remaining milk until smooth; drop by tspfuls onto corn mixture.
  • Step #12 Bake at 450 degrees F for 13-15 mins or until done.
