Cirak (egg Cheese Roll) Recipe

Ingredients
  • 1 dash ground nutmeg
  • 1/4 tsp salt
  • 1 c white sugar
  • 2 tsps vanilla extract
  • 6 c milk
  • 12 eggs

Directions
  • Step #1 Line a large colander with a cheesecloth, allowing it to hang over the sides.
  • Step #2 Crack eggs into a large mixing bowl & beat slightly.
  • Step #3 Stir in sugar, salt, vanilla & nutmeg.
  • Step #4 Set aside.
  • Step #5 Heat milk in large saucepan over low heat/flame until almost boiling, do not scorch.
  • Step #6 Slowly stir in the egg mixture, whisking constantly.
  • Step #7 Cook over low heat/flame, stirring, until the mixture binds.
  • Step #8 Pour the hot mixture into the cheesecloth colander.
  • Step #9 Lift cheesecloth out of bowl, squeezing to remove as much liquid as you can.
  • Step #10 Tie cloth up tightly.
  • Step #11 Let it hang over sink or bowl for up to 3 hrs.
  • Step #12 Cover with a damp linen & place this in refrigerator for at least 24 hrs.
  • Step #13 Remove cheesecloth & slice to serve.
