Corn Rice Medley Recipe

Ingredients
  • 1 c chicken broth
  • 1 tbsp olive or vegetable oil
  • 1/2 c uncooked long grain rice
  • 1/2 c frozen corn, thawed
  • 1 tbsp grated Parmesan cheese
  • 1 green onion, sliced
  • 1/4 c sliced sweet red pepper

Directions
  • Step #1 In a saucepan, bring broth to a boil; add rice.
  • Step #2 Reduce heat; cover & let simmer for 1- mins.
  • Step #3 Meanwhile, in a small skillet, saute the red pepper & green onion in oil until tender.
  • Step #4 Stir into rice.
  • Step #5 Add the corn.
  • Step #6 Cover & cook for 5 mins or until rice is tender.
  • Step #7 Sprinkle top with Parmesan cheese.
