I dont like crunchy inside very much either-I have to saute my onions before I put them in. Meatloaf is one of the best comfort foods there is!

I always make meatloaf in the microwave. It gets so brown, and the edges get crunchy, and it's done in a bout 20 minutes! I never saute the onions first, and they are never crunchy...guess it depends on how you chop them...I chop mine pretty small. I did try adding chopped celery and red peppers once, and they stayed crunchy, I would definately saute them first next time!
