I put them in a zip loc and freeze them. When I have a good portion, I make veggie beef soup, especially if I have some leftover pot roast or beef gravy. Momma always saved those odds and ends too. Her soup was so good, the gravy added great richness and the extra V-8 juice made it so savory with the veggies. She always shredded cabbage into the soup fresh and added rice as her "filler". The family loves it and it is a favorite memory.

So many ways to use it in another meal. Also left over steak or grilled chicken, I use it on nachos or slice up and make sandwiches with bbq sauce.

We always have leftover bits of corn or peas etc. and they will usually sit in the fridge taking up room till time to throw them out. OMG...so happy I learned something new today!
