Turkey times 2
I love to try new recipes and had decided to try a brine for my turkey last Thanksgiving. However, I usually have 14-20 people for lunch, (including my dad who requires the exact same foods every year, no deviation)and was worried that it wouldn't turn out so I cooked 2 turkeys, one my usual way and the brined one. The brined one was beautiful and so juicy, I was truly shocked. My mom, who never asks me for recipes or applauds my cooking, was asking for the recipe and raving to her friends about my fantastic turkey. I am a vegetarian so I didn't eat any, but my husband was convinced that the turkey was so good, it would make any vegetarian turn carnivore. No one touched the other turkey.

Somewhere I have a recipe that calls for brining the turkey in white cranberry juice... It is awesome.. Will have to dig it out and post.


Brined turkey
I guess it was about 3 years ago, I learned about brining poultry and decided to try it one Thanksgiving. I went to the farmers' market (ours goes all year long) and and got the smallest one I could find, which was 22 pounds. It's not easy finding a vessel that can hold a 22 pound turkey, which looked much smaller when I bought it, and liquid to cover it. So I bought a baking bag and a large aluminum baking pan, put the turkey in the bag, put the bag in the pan, and filled the bag with the liquid. It all got secured and put in the fridge. I ended up overcooking it (I don't make turkey regularly), but it was still moister than any non-brined bird I've ever had! And the flavor...mmmmmmmmmm

Another turkey idea
One of the other unique way I've made turkey was to debone it, leaving bones in the drumsticks and wings, and stuff it with, what I call, an incredibly flavored "meatloaf" stuffing then bake. My mom found the recipe years ago...I need to figure out what I did with my copy of it....
