Why is it than some of the recipes tagged as vegan aren't?


There are usually
vegan substitutes

ie-

eggs--> En-R-G egg replacer, ground flax, or tofu

butter--> Earth Balance Margarine

Cream Cheese--> Tofutti Cream Cheese

Bacon--> Vegan Bacon

Hot Dogs--> Vegan hot dogs

Beef--> Texturized Vegetable/Soy Protein, ground vegan "meat", etc

Hamburgers--> Vegan hamburgers

Cheese--> any reasonable soy versions (Tofutti, Gourmet Vegan, and otherwise, some melt better than others)

Sausage--> Vegan sausage-italian, kielbasa, etc.

Milk--> Unsweetened nut or soy milk

Heavy Cream/Whipping Cream--> Heavy Whipping Cream made from soy

The list is not limited to anything. Usually there's an easy replacement and many pre-prepped ingredients are accidentally vegan (ie-Jello's regular fat pistachio pudding, Oreos, Nutter Butters-i think, etc.)
For the majority, it's trial and error to replace these items in baked/cooked goods, and read the instructions if it's a package like en-r-g egg replacer, as that cannot be made into scrambled "eggs" but tofu *can*.
