Cake mix question
I've asked this in a couple of other groups, and figured I'd ask it here- Does anyone have a recipe for a dry cake mix that I could make and use in place of a boxed cake mix for recipes that call for them? Can I just use the dry ingredients from a wheat-free cake recipe? I can't have the wheat in the regular cake mixes, but have some recipes that I used to enjoy. Or is there such a thing as a wheat-free cake mix, and where would I find it? Thanks for your help!

RE: Cake mix question
I may have some recipes let me look. There are mixes that you can buy. I don't know how good they are but the are REALLY expensive.. A lemon cake mix is around $7.. and that's for 1 layer!!!!! what type of thing do you want to use the cake mix for? ex: use it to make a pressed base for a bar cookie?

RE: Cake mix question
Wow that's so much! I'm a poor college student- definitely can't afford a $7 cake mix. The one recipe was a muffin recipe which the only other ingredient was pumpkin (by Hottamale), and I know I have and have seen several other recipes that have a cake mix as an ingredient, be them cakes, cookies, or bars. I just ordered a wheat-free, gluten-free dessert cookbook and in the excerpt that was online, there was extensive information about substitutions, so perhaps there will be something in there. But that would be great if you found something in your recipes. :) Thanks.
